Luribay is a land of food delicacies and regional specialities proudly handed down through the generations.
The fertile soil of the valley supports a varied, tasty and sustainable cuisine, in which the local produce takes pride of place.
Thanks to its renowned local produce and celebrated culinary tradition, over the years Luribay has become a top destination for Bolivian food tourism.
The most typical dish of Luribay is the conejada, a dish prepared using guinea pigs, rodents known in other parts of South America as cuye and in this region of Bolivia as cututu. The dish is accompanied by a sauce and served with rice and locally sourced potatoes and salad.
Another traditional food of Luribay is suckling pig served with potatoes, bananas, salad and pears, it owes its unique flavour to cooking in a clay oven.
Pampahacu, on the other hand, is prepared by making a hole in the ground in which wood is burned: the ingredients – usually rabbit, potatoes and sweet potatoes – are covered with hot stones and cooked underground. Other common dishes include charque, made from dried meat cooked over charcoal; lacayote and zapallo, two varieties of pumpkin cooked in the oven; ají de arveja, a tasty pea-based dish; lawa or corn soup; and chicha de mais, a drink. The typical dessert of Luribay is the jawi: a sweet potato cake covered with a delicious cream made with egg whites.
All these delicacies can be enjoyed at the Cabaña Unión or at the traditional Tuesday markets: write to us to arrange your visit and discover dishes with an ancient flavour.
