The care with which quinoa is produced in Santiago de Agencha is proof of the importance of this ancient staple food to the livelihood of the community.
Quinoa, called the "golden grain" or "grain of gold," is a herbaceous plant celebrated around the world for its high nutritional value.
Quinoa is a food to be discovered: in addition to its well-known nutritional properties, the history of plant and its cultivation process are not yet widely known. Which is why the community of Santiago de Agencha is happy to share the secrets of this "golden grain", an important part of the area's economic and cultural identity, by providing a unique experience for visitors.
After a walk through the quinoa fields surrounding Santiago de Agencha, to learn about the different varieties of the plant, the community members will tell you all about how the quinoa is grown and harvested, as well as how it is consumed. The farming practices have not changed much over the centuries and the people today still follow the traditions of their ancestors.
Once harvested and sorted by variety, the quinoa is taken home and toasted. It is then placed inside a saruna, a large stone container similar to a mortar, where it is trampled underfoot. The mechanical action of the grain rubbing against the stone removes the husks, after which the quinoa is washed to eliminate the remaining saponins, which would otherwise give it a bitter taste. It is then dried and can finally be prepared.
Quinoa is part of the food and cultural heritage of the entire Andean mountain range, so discovering how it is prepared together with the community of Santiago de Agencha is an experience that can’t be missed.
